Baked Tomato Bruschetta Chicken with Spaghetti Squash

Recipe for Baked Tomato Bruschetta Chicken with Spaghetti Squash – some of you have asked me to give you some of the recipes of the foods that I make on my instagram account so I am going to start with sharing my baked tomato bruschetta chicken with spaghetti squash recipe for you to try. It is a gluten free recipe that is savory and filling without any gluten for those of you looking for a healthy new recipe for summer.

Ingredients

6 Chicken legs

  • 6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
  • 2 cloves garlic, minced
  • 1 Tbsp extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped.
  • Salt and freshly ground black pepper to taste
Recipe for bruschetta – make before prepping chicken
take ingredients above and cut up plum tomatoes add to bowl and mix with minced garlic, virgin olive oil, balsamic vinegar and basil leaves and salt and pepper. Set aside until chicken is ready to bake.

In addition –  1 carton plum tomatoes rinsed to be used on the bottom of the pan under the chicken legs.

1 spaghetti squash – poke holes with a fork on spaghetti squash and cook in the microwave for 10 minutes on high.

For the chicken:

Preheat the oven at 450 degrees fahrenheit. Take carton of plum tomatoes and line the pan with all of the plum tomatoes then place the chicken legs on top, spread bruschetta mixture on top of the chicken legs and bake for 45 minutes at 450 degrees and then at 500 degrees for last 5 minutes to give it a roasted look.

When dishing up the whole dish, cut the spaghetti squash lengthwise in half and scrape the spaghetti squash so the squash comes out in spaghetti like strands and dress with salt and pepper and olive oil to taste then lay a small portion on each plate, add one chicken leg and bruschetta on top and serve.

Paleo Diet Spaghetti Bolognese Recipe from the Practical Paleo Book

I just started reading the book Practical Paleo: A Customized Approach to Health and a Whole-Foods Lifestyle and have learned so much about why we as a country may have some of our health problems today. For example my GERD and Allergies are definitely food related and so is my eczema. The book talks about everything from sleep, processed foods to exercise. I read the whole thing in one night because it was that fascinating.

The main takeaways from the book are – we need to stop eating processed foods and start eating only foods that come straight from the farms. The saying “you are what you eat” is definitely the truth and I decided to really take my health seriously.

The best thing about the book is the fact that it has recipes that will leave you not craving for anything that you previously ate. The substitute ingredient for flour to make a chocolate cake is almond flour or almond meal, spaghetti bolognese can still be enjoyed by using spaghetti squash and so many more great ideas.

I made the spaghetti bolognese from the book tonight and it was filling and delicious. I did not miss the pasta and got a big serving of vegetables all in one go.

Here is my finished product. The proof is in the fact that my 8 year old loved it also.

Zucchini Ragu Angel Hair Pasta Recipe – Original Shopping and Info Recipe

When summer comes around I always think about ways to incorporate all the fresh produce that is available in our markets to make healthy light dishes. One of my favorite restaurants in Los Angeles frequented by Angelina Jolie, Clint Eastwood, Heidi Klum and others makes one of my favorite dishes which is a Zucchini stuffed pasta. I thought about how I could make my version of this dish at home and came up with a very similar dish. Hope you enjoy it as much as I do. Let me know your thoughts. Make a comment.

Ingredients:

1 Yellow Onion – sliced

4 Zucchini – sliced thin

1 cup of Parmesan Cheese

1 box of Angel Hair Pasta

1 cup of Chicken Stock

1 tsp of Olive Oil

1 cup of cooked spinach

Directions:

In a medium pot  add onions, zucchini, chicken stock, parmesan cheese, and spinach cook until onions are soft about 15 minutes on medium heat. Cook pasta according to directions. And add cooked ragu into pot of drained pasta and mix altogether. Season to taste. Enjoy with a glass of pinot grigio.

Peanut Butter Chocolate Chip Cookie Recipe made with wheat flour

I set out to make a healthy peanut butter chocolate chip cookie for my family and ended up with more of a breakfast bar. It is healthy, but your kids will not know that it is healthy and will eat it happily. I do not know the exact nutrition breakdown on this cookie, but it is definitely a healthy alternative to the original peanut butter cookie.

Ingredients:

15 tablespoons of peanut butter  – all natural
2 tablespoons of melted butter
4 eggs 
1 cup firmly packed brown sugar
1 teaspoon of vanilla
1 1/2 cup of whole wheat flour
1 teaspoon of baking soda
3 cups of oats
1 cup of chocolate chips or carob chips 
1 cup of granulated sugar or substitute for agave 


Mix all ingredients together in a mixer and make tablespoon size cookies and press down. Bake 11 to 13 minutes until golden brown. Wait 5 minutes and enjoy.

Good Morning America had celebrity chef Rocco Dispirito on the show today to talk about Green Smoothie Recipes that can help us get on track to a healthier summer. Celebrities like Eva Longoria Parker and Tony Parker have had that green smoothie fix for quite some time now. Get your green fix today. I posted some great recipes that I like to use daily to keep my family healthy.

Spinach-Mango
1 handful of fresh organic spinach
1 stalk celery (Optional)
1 or 2 sweet yellow filipino mangos
enough water to blend

Smoothie
1 bunch red dandelion
1/2 small small watermelon
6 strawberries
1 cup of grapes

Smoothie
1 bunch dino kale
2 oranges
6 strawberries
1 cup of grapes

Kale-Strawberry-Peach
1 bunch green kale
1 pint strawberries
3 small peaches
2 cups water

Peach-Spinach
6 peaches
2 handfuls of spinach leaves
2 cups water

Apple-Kale-Lemon
4 apples
½ lemon juice
5 leaves of kale
2 cups water

Pear-Kale-Mint
4 ripe pears
5 leaves of kale
½ bunch of mint
2 cups water

Strawberry-Banana-Romaine
1 cup strawberries
2 bananas
½ bunch romaine
2 cups water

Mango-Weeds
2 mangos
1 handful edible weeds, (ambsquarters, stinging nettles, purslane, etc)
2 cups water

Smoothie
One half small seeded watermelon peel and all ( amazing by itself actually! )
10 strawberries
1 bunch spinach
1 cup water.

Smoothie
1 beautiful bunch of red dandelion greens
1 orange remove orange part of peel with knife, leave the white as it is high in calcium
1 mango
1/2 banana
